Ingredients
- 4.6 ounces of pasta of your choice
- 1 onion
- 1 tablespoon minced garlic, optional
- 6.4 ounces of cocktail tomatoes
- 5.7 ounces boneless chicken
- 1 tablespoon olive oil
- 2 1/2 tablespoon cajun seasoning
- 1 cup of cream
- 1.4 ounces of cheese * see notes
- 1 cup chicken broth
- Fresh parsley, to garnish
Instructions
- Cook your pasta according to the directions on the package. While the pasta is cooking, prepare your Cajun pasta sauce.
- Keep all of your ingredients ready first. Cut your onion, chop your garlic (if you choose to add garlic), cut your cocktail tomatoes in half, cut your own boneless chicken into equal bites and keep everything aside. Make sure you keep the other ingredients somewhere near you so you can use them one by one while cooking without wasting time or overcooking.
- Take a pan and heat. Add the oil and sauté your sweet onions, then add the chopped garlic and sauté for one minute over medium heat.
- Then continue adding the Cajun seasoning and sauté the seasoning on high for a few seconds so that the aroma of the spices and herbs is released.
- Lower the flame and add the chicken. Mix the chicken on all sides and add the cream and cheese, as well as the chicken broth or the pasta water (depending on your preference, see the notes). Mix the contents of the pan well and simmer over low heat.
- We don't want to overcook the chicken or it will become soft and hard, so the chicken will poach slowly in the sauce while the contents of the pan simmer. It will take about 5 minutes. Check and test if the chicken is cooked, it should be juicy but cooked inside. Finally, if your sauce needs salt, it's time to test the taste.
- At least remove the sauce from the heat and mix the pasta cooked in the sauce with the tomatoes. Garnish with fresh parsley and serve hot.
