Pineapple Chicken and Rice

Ingredients:

  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, diced
  • 1 cup chopped pineapple (fresh or canned)
  • 1/2 cup pineapple juice (from canned pineapple)
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 2 cups cooked white rice

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides.
