Easy Mushroom Risotto Recipe with Mixed Mushrooms

Easy recipe of mushroom risotto with various mixed mushrooms, white wine and parmesan.
The risotto rice dish is stuffed with comforting flavors and in this particular Italian recipe you can choose your mushrooms.
Perfect, during the fall season when we harvest mushrooms in the woods or when we discover an abundant crop of mushrooms in the grocery market.

Ingredients

  • 1 to 2 tablespoon butter
  • 1 onion
  • 2 garlic
  • 1 1/2 cups coarsely chopped mixed mushroom varieties, * see Notes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 180 grams of arborio rice
  • 1/2 cup white wine
  • 3 cups of water mixed with concentrated broth
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1/4 cup grated Parmigiano Reggiano cheese

Instructions

  1. Add the butter to a saucepan and melt. Add the chopped onion and the finely chopped garlic. Cook the sweet ingredients.
  2. Then add the mushroom pieces and sauté for a minute, before seasoning the dish with salt and black pepper. Cook the mushrooms for 2-3 minutes over medium heat.
  3. At this point, you can add the rice. Sauté the rice for one minute over high heat so that the aroma is released.
  4. Deglaze with white wine.
  5. Then pour a ladle of the broth.
  6. Season with thyme and rosemary. Mix well and keep over medium heat.
  7. Continue to pour in a ladle at a time of the broth. After each ladle of broth, mix the contents and cook, then add another ladle of broth. Continue the process until you have used up all the broth and the rice is cooked through.
  8. Add and mix the Parmigiano Reggiano cheese.
  9. Serve hot.

Remarks

For the mushrooms, I used a mixture of dried and fresh mushrooms. I used shiitake, oysters and button mushrooms in this recipe. Read in the post the varieties of mushrooms you can choose.
Use only short-grain Arborio rice or other varieties of risotto rice to prepare this dish.
For the broth, use vegetable broth if you want this dish to be vegetarian. I also like to use chicken broth.
I used dried rosemary and thyme on a dried stem. You can also use fresh herbs. The measures in the herb recipe are packaged in volume.
