Ingredients

For the cakes:

  • 1 box of red velvet cake mix
  • 1 can of white cake mix
  • Eggs, water and oil as needed for cake mixes
  • 24 chocolate hearts for decoration

For the frosting:

  • 1/2 cup softened salted butter
  • 8 ounces softened cream cheese
  • 3 to 4 cups caster sugar
  • 1/2 tablespoon vanilla

Instructions

To make the cupcakes:

  1. Preheat your oven to 350 degrees and grease a 10 × 14 jelly loaf pan with cooking spray. Prepare your red velvet cake mix according to the directions on the package and pour it into the jelly pan.
  2. Bake at 350 degrees for 14-16 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 5 minutes, then transfer the baking sheet to the freezer for 15 minutes to cool completely.
  3. While the red velvet cake cools, prepare the white cake mix according to the directions on the package.
  4. When the red velvet cake has cooled, remove it from the freezer and, using a small heart-shaped cookie cutter, cut out 24 heart shapes.
  5. Line your cupcake pan with cupcake liners, then place about a tablespoon of white cake batter into the bottom of each, then add the remaining batter to a gallon ziplock or pastry bag.
  6. Gently press a heart in the center of each liner. Don't crush it! And carefully pass the white cake batter around the heart until the lining is about 2/3 full. Pipe a little on the exposed heart to protect it from burns in the oven.
  7. Bake at 350 for 20 to 22 minutes or until a toothpick inserted in the white part of the cake comes out clean. Let cool completely before frosting.

To make the icing:

  1. In a stand mixer, beat the softened butter and the cream cheese until smooth and creamy.
  2. Add the powdered sugar 1/2 cup at a time until the frosting reaches a creamy, pipable consistency. Add the vanilla and mix until homogeneous.
  3. Glaze the cupcakes with a star shaped tip, cover with a chocolate heart and enjoy!
