I also love how tasty breakfast foods can be like breakfast enchiladas or an egg casserole - or super sweet like pancakes or French toast. Well, lucky for me, my friend, Meaghan from Cook. Crafts. Love. is back on the blog today. This time, she brought her easy recipe for homemade lemon donuts. I drooled over the photos and can't wait to try doing them with my boys.

Ingredients

For the donuts:

  • 2 cups of flour
  • 1/4 cup cornstarch
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup sugar
  • 2 tablespoons butter
  • 2 egg yolks
  • 1/2 cup sour cream
  • Vegetable oil for frying

For the frosting:

  • 3 1/2 cups powdered sugar
  • 1/2 tablespoon corn syrup
  • 1/2 teaspoon vanilla
  • 1/3 cup hot water
  • 2 tablespoons lemon juice
  • 2 tablespoons lemon zest

Instructions

  1. Beat the butter and sugar in a stand mixer until a paste forms. Add the egg yolks and mix well.
  2. In another bowl, whisk together the flour, cornstarch, baking powder, salt and nutmeg. Add the dry ingredients to the wet ingredients in three additions, alternating with sour cream. Be sure to start and end with the flour mixture.
  3. Wrap the dough tightly in plastic wrap and refrigerate for 1 hour.
  4. Roll the dough on a well-floured surface about 1/2 "thick and using a cookie cutter or two round cookie cutters of different sizes cut out donuts and holes.
  5. Pour 2 "of vegetable oil into a heavy bottomed pan and use a candy thermometer to heat it to 325 degrees.
  6. Gently add the donuts to the hot oil and cook for 2 minutes on each side, being careful not to overload the pan. Remove on paper towels to drain.
  7. Whisk together the frosting ingredients and immerse the donuts in them until they are completely covered. Place yourself on a wire rack so that the excess frosting can drip off. Let the glaze take 20 minutes before serving and one hour before storing.
