Midwestern Farm Burger Breakfast Recipe

Filled with fresh flavors, this Midwestern farm burger is a delicious way to start the morning off right!
Almost every Sunday morning, as we got older, we had some sort of breakfast including eggs. Usually there were sausages or occasionally bacon. And sometimes there were also pancakes or French toast, but growing up in the Midwest meant eggs for Sunday breakfast.
Each of us had our own preference for "How would you like your eggs?" For me, it was always scrambled with a little cheese. Which is still my favorite way to eat them, but when I came across this recipe from Midwestern Farm Burger, I knew I would try my eggs in a new way because it looked too delicious to pass!

Ingredients

  • 5 c. Finely chopped fresh chives
  • 8 oz cream cheese
  • 8 slices of bacon
  • 4 eggs
  • 1 ripe avocado, sliced
  • 4 sandwich rolls
  • 3 oz arugula
  • 1/2 cup alfalfa sprouts (about 3/4 oz)

Instructions

  1. Finely chop the chives and mix with the cream cheese.
  2. Fry the bacon in a pan without oil or butter.
  3. Place the bacon on paper towels to absorb the fat, but do not throw the fat out of the pan.
  4. Fry the eggs in the remaining bacon fat.
  5. Cut the avocado in half and remove the pit. Remove the peel and the slice.
  6. Reheat the pan. Slice the buns and toast cut side until golden.
  7. Spread the cream cheese and chive mixture on the roller.
  8. Garnish with egg, bacon, avocado, arugula and sprouts.
  9. Place the top of the bread on the sandwich and enjoy!
