Ingredients
For cookies
- 1/2 cup butter at room temperature
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 large egg
- 1 1/2 cups old-fashioned oats
- 1 cup of flour
- 1 teaspoon of cinnamon
- 1/2 teaspoon of baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
- 1 cup finely grated carrots
- 1/4 cup raisins
For the frosting
- 4 oz cold cream cheese
- 1/4 cup unsalted butter at room temperature
- 2 cups caster sugar
- 1/2 tablespoon vanilla extract
Instructions
For cookies
- Preheat the oven to 325 degrees.
- In the bowl of a stand mixer, mix the butter and sugars until a paste forms. Add the vanilla and the egg and mix well.
- Add oats, flour, cinnamon, baking soda, salt and nutmeg and mix until well combined. Be careful not to mix too much!
- In a food processor, beat the grated carrots until they are in small pieces. If you don't have a food processor, you can also chop them with a knife. You don't want big chunks of carrots in these delicate little cookies, so take the time and don't skip this step!
- Gently stir in the carrots and raisins.
- If the dough is a little stiff, you can loosen it with 1 teaspoon of milk.
- Place the cookies with a rounded tablespoon on an upholstered baking sheet and bake at 325 for 9-11 minutes or until golden. (You want them to be still slightly soft so they are easy to bite. Do not overcook until they are crunchy!).
- Move to a cooling rack and cool completely before frosting.
For the frosting
- Add the vanilla and cold cream cheese to a stand mixer and beat on medium speed until fluffy.
- Add the powdered sugar 1/2 cup at a time, mixing well after each addition.
- Once the powdered sugar is completely incorporated, add the FLEXIBLE butter at room temperature and beat until everything is well mixed.
For the sandwich cookies
- Glaze the bottom of one of the carrot cookies, then place another cookie on top to make a sandwich. Repeat with any remaining cookies. Keep refrigerated. Enjoy.
