Ingredients
For the dough
- 1 stick of salted butter
- 1 cup of flour
- 1/4 cup sugar
For filling
- 4 large eggs
- 1 cup freshly squeezed lemon juice, about 5-6 lemons
- 1/4 cup flour
- 1 1/2 cups sugar
- 1/2 pint pureed raspberries (keep 9 whole berries for garnish)
For garnish
- 1/4 cup caster sugar
- 9 whole raspberries
Instructions
- To make the crust, cream together the butter and sugar until pale yellow. Add the flour and mix until a crumbly ball forms.
- Press the dough into the bottom of a lightly greased 8 × 8 square mold.
- Bake in the preheated 350 oven for 12-15 minutes or until lightly browned around the edges.
- While cooking, make the garnish by beating the eggs, lemon juice, sugar, flour and raspberry puree in a large bowl.
- Let stand while the crust finishes baking, then give it another quick whisk just before pouring it into the pan.
- When the crust has finished baking, pour the mixture over the HOT crust and bake for another 20-25 minutes or until just set.
- Let cool for several hours (overnight is best) before removing from the pan, cutting into bars and sprinkling with powdered sugar.
