  • 1 stick of salted butter
  • 1 cup of flour
  • 1/4 cup sugar

  • 4 large eggs
  • 1 cup freshly squeezed lemon juice, about 5-6 lemons
  • 1/4 cup flour
  • 1 1/2 cups sugar
  • 1/2 pint pureed raspberries (keep 9 whole berries for garnish)

For garnish

  • 1/4 cup caster sugar
  • 9 whole raspberries

Instructions

  1. To make the crust, cream together the butter and sugar until pale yellow. Add the flour and mix until a crumbly ball forms.
  2. Press the dough into the bottom of a lightly greased 8 × 8 square mold.
  3. Bake in the preheated 350 oven for 12-15 minutes or until lightly browned around the edges.
  4. While cooking, make the garnish by beating the eggs, lemon juice, sugar, flour and raspberry puree in a large bowl.
  5. Let stand while the crust finishes baking, then give it another quick whisk just before pouring it into the pan.
  6. When the crust has finished baking, pour the mixture over the HOT crust and bake for another 20-25 minutes or until just set.
  7. Let cool for several hours (overnight is best) before removing from the pan, cutting into bars and sprinkling with powdered sugar.
