Maybe once a year you will find me doing something from scratch ... but the rest of the year, box mixes are my favorite.These mint brownie dessert shooters are a perfect treat for St. Patrick's Day ... or any day, really. And they can serve as inspiration for other flavor combinations. Or with a few drops of food coloring, it can also work for other holidays!

Ingredients
- brownie mix and any other ingredients according to the box
- instant vanilla pudding mix
- Milk
- 1/2 tsp. peppermint extract
- whipped cream
- rainbow sprinkles
- green food coloring
Instructions
- Mix and bake the brownies according to the box.
- Prepare the instant vanilla pudding.
- Add 1/2 teaspoon peppermint extract and a few drops of green food coloring to the pudding. Mix well, cover and place in the refrigerator until the brownies are cooked.
- Once the brownies have cooled, cut them into small pieces that will hold in the serving glass.
- Place a few pieces of brownies at the bottom of the glass, spread with the mint pudding and garnish with whipped cream and sprinkles!
- Refrigerate until ready to serve.
