Three Cheese Lasagna Roll Ups

As fall approaches, I start to think about all the comfort foods I like to include in our weekly meal plan. Most accioli, chilli and lasagna are still at the top of the list.

We eat leftovers a lot the next day for lunch, so I love making lasagna rolls for dinner. Delicious for dinner and even more delicious for lunch! There is something to eat certain foods in the coming days ... the flavors all permeate together and make the dish even more delicious to eat.

Three cheese lasagna roll recipe

Ingredients

  • 8-10 lasagna noodles
  • 1 lb ground turkey
  • 15 oz ricotta
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated parmesan
  • 1 egg
  • 1 bag of spinach
  • 1 jar Mezzetta Marinara
  • nonstick spray

Instructions

  1. Preheat the oven to 400.
  2. Boil the lasagna noodles as directed on the can.
  3. Brown the ground turkey and blanch the spinach.
  4. Mix the ricotta, mozzarella, parmesan, spinach and egg. Once everything is well mixed, add the golden ground turkey.
  5. Drain the noodles and lay them flat on a cutting board to start filling them.
  6. Divide over the mixture and spread over the whole noodles.
  7. Roll up the noodles and place them in a glass baking dish covered with a non-stick spray.
  8. Cover the rolls with marinara sauce and garnish with more cheese if desired.
  9. Cover the dish with aluminum foil and bake for 30 minutes.
