Material
For sandwiches
- 4 slices of sourdough bread
- 4 oz mozzarella slices
- 1 large tomato sliced
- 2 oz roasted red pepper
- 1/2 cup fresh basil leaves
- 2 garlic cloves
- 2 tbsp walnuts
- 2 tablespoons of grated parmesan
- Salt and pepper flavor
- 1/4 cup olive oil
- To make a plague, add basil, garlic, walnuts and parmesan cheese to a food processor. Season with salt and pepper and mix. While the food processor is on, slowly pour the olive oil into the mixture to emulsify the olive oil.
- Spread the pesto evenly on four pans and place the pans in a panini maker or toaster oven for 2 minutes.
- Next, put mozzarella cheese, tomatoes and roasted red pepper on a slice of bread so that the cheese melts and the vegetables become softer.
- When the cheese has melted, close the sandwich and cut immediately to serve
