Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil, chopped, for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
  2. Place the flour in a shallow dish. In a separate shallow dish, beat the eggs. In another shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Dip each chicken breast in the flour, shaking off any excess, then dip in the egg mixture, and finally coat in the breadcrumb mixture. Place the chicken on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the coating is crispy.
  5. Remove the chicken from the oven and top each breast with 1/4 cup of marinara sauce and 1/4 cup of shredded mozzarella cheese.
