Baked Sweet Hawaiian Chicken


Here's the recipe for Baked Sweet Hawaiian Chicken:

Ingredients:

  • 4-6 chicken breasts, boneless and skinless
  • 1 cup cornstarch
  • 3 eggs, beaten
  • Salt and pepper to taste
  • 1/4 cup oil
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/3 cup apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes
  • 1 can (20 ounces) pineapple chunks, drained
  • Green onions, sliced, for garnish
  • Sesame seeds, for garnish

Instructions:

  1. Preheat the oven to 375°F.
  2. Cut the chicken breasts into bite-sized pieces.
  3. Place the cornstarch in a shallow dish. Beat the eggs in another shallow dish.
  4. Season the chicken with salt and pepper, then coat each piece with cornstarch, shaking off any excess. Dip each piece in the beaten eggs, then place them on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes, flipping the chicken halfway through, until the chicken is golden brown and cooked through.
  6. In a saucepan, whisk together the oil, pineapple juice, brown sugar, soy sauce, ketchup, apple cider vinegar, garlic powder, onion powder, and red pepper flakes.
  7. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 5 minutes, stirring occasionally.
  8. Add the pineapple chunks to the sauce and cook for 1-2 minutes, until heated through.
  9. Once the chicken is cooked, remove it from the oven and transfer it to a large bowl.
  10. Pour the sauce over the chicken and toss to coat.
  11. Serve the Baked Sweet Hawaiian Chicken over rice, garnished with green onions and sesame seeds.
