Ingredients:
- 4-6 chicken breasts, boneless and skinless
- 1 cup cornstarch
- 3 eggs, beaten
- Salt and pepper to taste
- 1/4 cup oil
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 1/2 cup ketchup
- 1/3 cup apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder

- 1 can (20 ounces) pineapple chunks, drained
- Green onions, sliced, for garnish

Instructions:
- Preheat the oven to 375°F.
- Cut the chicken breasts into bite-sized pieces.
- Place the cornstarch in a shallow dish. Beat the eggs in another shallow dish.
- Season the chicken with salt and pepper, then coat each piece with cornstarch, shaking off any excess. Dip each piece in the beaten eggs, then place them on a baking sheet lined with parchment paper.
- Bake for 20 minutes, flipping the chicken halfway through, until the chicken is golden brown and cooked through.
- In a saucepan, whisk together the oil, pineapple juice, brown sugar, soy sauce, ketchup, apple cider vinegar, garlic powder, onion powder, and red pepper flakes.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 5 minutes, stirring occasionally.
- Add the pineapple chunks to the sauce and cook for 1-2 minutes, until heated through.
