This recipe is a family favorite in my house! It's so easy to make and has everything you need for a well-balanced meal. The combination of tender chicken, fluffy rice, and crunchy broccoli is delicious, and the cheesy sauce ties everything together. Plus, it all cooks in one pot, so clean up is a breeze!
Ingredients:
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
Instructions:
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Season the chicken with salt and pepper, and add it to the skillet. Cook until browned on all sides, about 5-7 minutes. Transfer the chicken to a plate and set aside.
- Add the diced onion and minced garlic to the same skillet and cook until the onion is soft and translucent, about 5 minutes.
- Add the rice to the skillet and stir to coat it with the onion and garlic mixture. Cook for 1-2 minutes, or until the rice is lightly toasted.
- Pour the chicken broth into the skillet and bring it to a boil. Add the broccoli florets and cooked chicken, and stir to combine. Reduce the heat to low, cover the skillet, and simmer for 18-20 minutes, or until the rice is cooked and the liquid has been absorbed.
- Remove the skillet from the heat and sprinkle the shredded cheddar cheese over the top. Cover the skillet and let it sit for 2-3 minutes, or until the cheese is melted.
