Ingredients:

  • 1 4-5 lb boneless prime rib roast
  • 1/2 cup butter, softened
  • 3 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat the oven to 350°F.
  2. In a small bowl, mix together the softened butter, minced garlic, chopped rosemary and thyme, salt, and black pepper.
  3. Rub the herb butter mixture all over the prime rib roast, making sure to get it into all the nooks and crannies.
  4. Place the prime rib roast in a roasting pan, fat side up.
  5. Roast in the preheated oven for about 2 hours, or until a meat thermometer inserted into the thickest part of the roast reads 125°F for medium-rare.
  6. Remove the prime rib from the oven and let it rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute and the meat to become more tender.
