- 1 4-5 lb boneless prime rib roast
- 1/2 cup butter, softened
- 3 cloves garlic, minced
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
- Preheat the oven to 350°F.
- In a small bowl, mix together the softened butter, minced garlic, chopped rosemary and thyme, salt, and black pepper.
- Rub the herb butter mixture all over the prime rib roast, making sure to get it into all the nooks and crannies.
- Place the prime rib roast in a roasting pan, fat side up.
- Roast in the preheated oven for about 2 hours, or until a meat thermometer inserted into the thickest part of the roast reads 125°F for medium-rare.
