- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 pound boneless, skinless chicken breasts, cut into small pieces
- 1/2 cup homemade or store-bought BBQ sauce
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded coleslaw mix
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
Instructions:
- Preheat your oven to 400°F.
- Toss the sweet potatoes with olive oil, salt, and pepper and place them on a baking sheet. Bake for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy.
