Sweet Taco Stuffed Potatoes Recipe


Ingredients:

  • 4 medium-sized sweet potatoes
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions:

  1. Preheat your oven to 400°F.
  2. Wash and scrub the sweet potatoes, then prick them all over with a fork. Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 45-50 minutes or until tender.
  3. While the sweet potatoes are baking, prepare the taco meat. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  4. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through.
  5. Add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper to the skillet. Stir to combine, then add the black beans, corn, and water. Cook for 5-7 minutes or until heated through.
  6. Once the sweet potatoes are tender, remove them from the oven and let them cool for a few minutes. Slice each sweet potato down the center, then use a fork to gently mash the inside of the sweet potato.
  7. Fill each sweet potato with the taco meat mixture, then top with shredded cheddar cheese.
  8. Return the stuffed sweet potatoes to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Serve the sweet taco stuffed potatoes hot, topped with chopped fresh cilantro and lime wedges.
