Ingredients:
- 2 cups shredded sweetened coconut
- 1/2 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
- Mini chocolate eggs
Instructions:
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, stir together the shredded coconut and cocoa powder.
- In a separate bowl, whisk together the peanut butter, honey, melted butter, vanilla extract, and salt until smooth.
- Pour the peanut butter mixture over the coconut mixture and stir until well combined.
- Using a spoon or cookie scoop, scoop the mixture into small mounds on the prepared baking sheet, making a small well in the center of each cookie.
- Press three mini chocolate eggs into the center of each cookie to create the "egg nest" look.
- Place the baking sheet in the refrigerator for at least 30 minutes to set.
