Ingredients:

  • 2 cups shredded sweetened coconut
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Mini chocolate eggs

Instructions:

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, stir together the shredded coconut and cocoa powder.
  3. In a separate bowl, whisk together the peanut butter, honey, melted butter, vanilla extract, and salt until smooth.
  4. Pour the peanut butter mixture over the coconut mixture and stir until well combined.
  5. Using a spoon or cookie scoop, scoop the mixture into small mounds on the prepared baking sheet, making a small well in the center of each cookie.
  6. Press three mini chocolate eggs into the center of each cookie to create the "egg nest" look.
  7. Place the baking sheet in the refrigerator for at least 30 minutes to set.
  8. Once the cookies have set, remove them from the refrigerator and store in an airtight container at room temperature. Enjoy!
