Ingredients:

  • 1 lb spicy sausage, sliced
  • 6 medium potatoes, peeled and sliced
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions:

  1. In a skillet, brown the sausage over medium-high heat, and then transfer to a slow cooker.
  2. Add the sliced potatoes, chopped onion, red and green bell peppers to the slow cooker.
  3. In a mixing bowl, whisk together cream of mushroom soup, milk, dried thyme, garlic powder, salt, and black pepper.
  4. Pour the mixture over the sausage and potato mixture in the slow cooker, and stir to combine.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are tender and the sauce is thickened.
  6. Sprinkle shredded cheddar cheese over the top of the casserole and cook for an additional 10-15 minutes, or until the cheese is melted and bubbly.
